Caramel Macchiato Jello Shots
1½+ cups of hot, strong coffee
½ cup + a splash more Coffee Mate Caramel Macchiato flavored creamer
¼ cup caramel sundae topping + more for drizzling
1 cup Smirnoff Kissed Caramel flavored vodka (or whipped flavored vodka)
2 packages Knox gelatin, divided
Whipped cream
Mini Mugs and Tiny Tasting spoons for serving.
BOTTOM layer: Add a splash of hot coffee to ½ cup creamer. Whisk in ½ packet of gelatin. Add ½ cup vodka. Feel free to add a bit more coffee to achieve the desired color (this is your lightest-colored layer). Jellinate into your Mini Mugs and chill until set, but still tacky (about 40 minutes).
Remaining layers: Add the caramel topping to the 1 ½ cups of coffee and whisk well. Next, add the remaining 1 ½ packets of gelatin to the coffee and whisk until dissolved. Divide coffee into 2 cups (3/4 cup each). Add ¼ cup of vodka to each of these coffee mixtures.
MIDDLE layer: Add a splash of creamer to one of the coffee mixtures, until you achieve the desired color. Pour over the first layer and chill for another 40 minutes.
TOP layer: You will not add any creamer to this remaining layer. Pour over the other two layers. Cover and chill until set. Garnish with whipped cream, a drizzle of caramel, and a sprinkle of cinnamon or pumpkin pie spice. Yield: 12 servings.
